What you'll need
- 2 thick slices of sourdough bread
- 1 ripe avocado
- Juice of ½ a lemon or lime
- Flaky sea salt
- 1–2 eggs (optional — fried or poached both work beautifully)

Method
- Toast your sourdough until golden and sturdy enough to hold the toppings.
- Halve the avocado, remove the stone, and scoop the flesh into a bowl. Add lemon juice and a pinch of flaky salt, then mash to your preferred texture — chunky or smooth, both work.
- Spread the avocado generously over each slice of toast.
- If using eggs, fry or poach them now and place on top of the avo.

- Finish with an extra pinch of flaky salt and serve immediately.
