Silken Tofu with Chilli Crisp, Black Vinegar and Soy

The dish that earns its keep

This is the kind of recipe that looks far more impressive than the effort involved. Silken tofu straight from the packet, a quick drizzle of sauce, a spoonful of Rose's Chilli Crisp, and dinner is done. It's light, deeply savoury, and that contrast between the cold, wobbly tofu and the warm crunch of chilli crisp is genuinely addictive. Serve it with steamed rice and you have a complete meal in under 10 minutes.

Ingredients (serves 2)

  • 1 block silken tofu (300–400g), cold from the fridge
  • 1 tbsp soy sauce
  • 1 tsp black vinegar (Chinkiang vinegar)
  • 1 tsp sesame oil
  • 1–2 tsp Rose's Chilli Crisp Original Spicy
  • 2 spring onions (green onions), thinly sliced
  • Steamed white rice, to serve
  • Optional: toasted sesame seeds, fresh coriander

Method

  1. Drain the tofu carefully — silken tofu is delicate. Tip it gently out of the packet onto a plate or shallow bowl. Pat the surface lightly with a paper towel to remove excess water.
  2. Make the sauce by combining the soy sauce, black vinegar, and sesame oil in a small bowl. Stir and taste — adjust to your preference.
  3. Dress the tofu by spooning the sauce evenly over the top.
  4. Add the chilli crisp — spoon Rose's Chilli Crisp generously over the top, making sure to get plenty of the crunchy bits. This is the hero of the dish.
  5. Finish with sliced spring onions and sesame seeds if using.
  6. Serve immediately with steamed rice alongside.

Tips

  • Keep it cold: Silken tofu served straight from the fridge is part of what makes this dish so refreshing. The contrast with the room-temperature sauce and crunchy chilli crisp is the whole point.
  • Black vinegar matters: Chinkiang black vinegar has a malty, slightly smoky depth that regular rice vinegar doesn’t replicate. It’s worth keeping a bottle in the pantry — find it at most Asian grocery stores.
  • Mild version: Prefer less heat? Use Rose's Mild Spice — you’ll still get all the crunch and umami with a gentler warmth.
  • Make it more substantial: Add a soft-boiled or poached egg on the side, or a handful of blanched edamame for extra protein.
